I tried this recipe for Christmas mincemeat and i must say it is absolutely gorgeous, so i would like to share it with you.
You can make up a batch of this mincemeat and store it in a jar, the mincemeat will keep for about a year if stored in a cool, dark cupboard.
INGREDIENTS:
1 big bramley apple, cored and chopped into small pieces
14oz of mixed fruit
4oz of mixed peel (orange and lemon)
4 dates chopped into small chunks
4oz of shredded suet
6oz of soft brown sugar
Grated zest of a lemon and orange
Juice of a lemon and orange
A good handfull of flaked almonds (about 1oz)
2tsp mixed spice
1tsp cinnamon
15ml Brandy
You could also add chopped cranberries, cherries or apricots.
Mix all of the ingredients above except for the brandy. Once mixed thouroughly, cover the bowl with a cloth and leave in a cool place overnight. The next day cover the bowl with some foil and bake in the over for about 2.5 hours on gas mark 120c/225f. Remove the bowl and while it cools keep stirring it adding the brandy. Onced cooled place in to a jar to store away or use to make lovely mince pies.
I made about 18 mince pies with this and my boys (including the man of the house) lapped them up, i have had to make another batch.
