These salmon cakes are simple and easy to make so much so that they can be made by your children. They do not contain potato but are combined together with egg.
Tin of Red Salmon, flaked
2 Slices of Bread, blended to breadcrumbs
Half of Red Bell Pepper, chopped
4 Spring Onions, chopped
2 Eggs, beaten
salt and pepper to taste or chilli flakes
2 garlic cloves, chopped finely
Empty the salmon into a bowl and flake it up with a fork.
In a food processor, blitz up the pepper and spring onions together. Add the together with the salmon in the bowl.
Blitz the bread together in the processor to make breadcrumbs, once done add them to the salmon and pepper mix.
Mix in the beaten eggs and combine together add in some salt and pepper to taste or some chilli flakes.
Heat up some oil or butter and garlic in a frying pan, with a tablespoon pick up a nice big dollop of the salmon mixture and place in the hot pan, shaping it into fishcakes. Fry on one side for a few minutes then turn over and fry the other side. Do this until all the mixture has been used up, we got about 8 good sized cakes from our mixture.
They are very tasty and make a great starter for that special meal, served up with a leaf of a little gem and some baby tomatoes with a splash of Worcester sauce.
