These cupcakes are easy to make and are ideal for giving out as little treats at Easter time.
My eldest son and I made these little Easter chick cupcakes yesterday, he has been practising on his cake decorating skills, I think he done really well.
Ingredients:
150g Self Raising Flour
150g Caster Sugar
150g Softened Butter
3 beaten eggs
1 tbsp Milk
1 tsp Vanilla Essence
Yellow ready to roll Icing
Red/Orange ready to roll Icing
Black ready to roll Icing
Butter cream
This recipe will make about 12 cupcakes
Method:
- Pre-heat oven at 180
- Combine the butter and caster sugar until nice and smooth
- Add in the eggs and mix together adding a little of the flour to stop it form curdling
- Stir in the milk and vanilla essence
- Finally fold in the flour
- Spoon out the mixture evenly between the cup cases (we always silicone cases)
- Bake in the oven for 12-15 minutes
Wait until the cupcakes are cooled down, now you can decorate them
- Roll out the yellow icing until nice and thin, cut out circular discs (we used the rim of a mug which was just the right size to cover the top of the cupcake
- Using a small amount of butter cream, place the yellow circular discs on the to the cupcake
- Cut out shapes for the wings and stick them in place using a little water
- Make little balls for the eyes out of the black icing and stick them in place
- Cut out little triangles for the chicks beaks and stick them in place
Now they are ready to eat, yummy!
