Raw Millionaire Bites Recipe

These delicious little gooey pieces of deliciousness are made from raw ingredients and I promise you that you won’t want to go back once you’ve tasted these. With a smooth cashew base and a gooey date middle, topped with a rich dark chocolate, it’s like tasting raw gold.

These little treats really are just pure delight! They have everything you want from a sweet treat.

Thanks to them being made with all natural, whole ingredients such as nuts, dates and coconut oil they are also better for you.

This recipe requires no baking, just a lot of blending and freezing

Raw Millionaire Bites

Millionaire bites made from cashew, dates and cacao

Ingredients

  • 150 grams whole rolled oats
  • 125 grams raw cashews
  • 225 grams medjool dates
  • organic coconut oil
  • 6 tbsp raw cacao powder heaped spoon
  • 4 tbsp agave nectar/honey

Instructions

Base:

  1. Ground the oats and cashew together until fine and then mix in 3 tbsp of melted coconut oil.

  2. Combine well until it is paste like.

  3. Place into the bottom of a 9x9 tin/silicone.

    Press down firmly and put into the freezer to set

Middle:

  1. Blend together the dates and 2-3 tbsp of coconut oil until it is a smooth caramel like texture. Add in a couple of tbsp of honey or agave nectar and mix well.

  2. Take the base out of the freezer and add on the date mixture. Press down with the back of a spoon and smooth over.

  3. Place back in the freezer for about half hour

Top

  1. In a saucepan on the hob place the cacao powder, 6 heaped tbsp of coconut oil and 2 tbsp agave or honey.

  2. Melt together until runny. Mix well.

  3. Take the base back out of the freezer and top with the cacao mixture.

    Add in some crushed cashew for that added crunch

     

  4. Place back in the freezer

Once all set and the chocolate has hardened, take out of the freezer and cut into bite size pieces

Store them in the freezer or fridge and eat as and when. They can become quite sticky when left out and will melt quite quickly. Individually wrap them in clinfilm or tin foil
