Easy Strawberry Cheesecake Recipe


With Summer well on its way, with lots of long warm days to come, you may be looking for that perfect dessert to dish up to friends that come to visit or something to place as the centre piece at your BBQ. I may just have the answer you were looking for…

This easy strawberry cheesecake is an absolute must to try – not only is it smooth on the taste buds, it is scrumptious to taste. And, may i add, easy to make.

INGREDIENTS:

  • 250g Digestive Biscuits
  • 100g Melted Butter
  • 2tbsp Cacao Powder
  • 1 pot Double Cream
  • 500g Full Fat Soft Cheese
  • 100g Icing Sugar
  • 2 Punnets Fresh Strawberries
  • Blueberries
  • Lemon Zest

9″ Loose-bottomed tin, electric mixer, zipped plastic food bag, rolling pin, large bowl

METHOD:

  • Line the loose-bottomed tin with some butter
  • Place the biscuits into the plastic food bag and using the rolling pin, crush the biscuits into crumbs
  • Pour the crumbs into a bowl and add in the cacao powder, stir
  • Add the melted butter and mix well until all the crumbs have been coated
  • Tip them into tin and press firmly down with the spoon
  • Place into a fridge to set
  • Place the soft cheese and icing sugar into a bowl and mix with the electric mixer. Add in the double cream and mix until completely combined
  • Crush a few strawberries until pulped and add into the cream mixture
  • Place the cream mixture on top of the biscuit base, smooth it down making sure that it is level
  • Leave to set in the fridge over night
  • To un-mold the cheesecake, place it on top of a tin can and push the sides down slowly
  • Remove the base of tin and place on to a serving dish
  • Blend half of the strawberries into a puree
  • Slice the rest of the strawberries, thinly
  • Now decorate the top with the strawberry puree and sliced strawberries. You can add on the blueberries here too.
  • Dust with some icing sugar and it’s ready to serve

When sliced to serve you will see the strawberries swirled into the cream. The cacao powder in the digestive base gives it that extra sweetness
